Coconut Sugar is made from the sap of coconut palms, and is a brown sugar sold as granule, blocks or liquid. It has an extremely low glycemic index, and an extremely high nutrient content.

It is considered to be one of the best natural sweeteners. It is an all-natural, whole food and is unrefined and not highly processed like brown sugar and other sugars.

Studies in the Phillipines, Japan and Australia have shown that the glycemic index of coconut sugar is between 38 and 54.
