Clever Raw Chocolate
Ingredients
- 1/2 cup coconut oil or use half coconut oil and half melted cacao butter - about 30g cacao butter
- 1/2 cup cacao powder
- 1-2 tbsp maple syrup
- 1/2-1 tsp vanilla bean powder or essence
- dash of himalayan salt

Instructions
- Melt the coconut oil either over a bowl of boiling water or over a very low heat on the hob. Add in your cacao (you might want to use a sieve to avoid lumps), maple syrup, vanilla and salt, and stir well until you reach a smooth consistency.
- Then pour the mixture onto greaseproof paper on a tray or into a mold, sprinkle with goji berries and coconut and seeds and refrigerate for 60 minutes or put in the freezer for 30 minutes.
- You can add dried fruit, nuts, cacao nibs, etc. You could also add flavours- peppermint, orange, rose, vanilla or coffee.
