Gluten Free Coconut Macaroons
Ingredients
- 1 cup shredded coconut
- 3/4 cup coconut milk
- 2 tbsps rice flour
- 1 tbsp agave nectar
- 1 tbsp melted coconut oil

Instructions
- Turn on oven to 200 C
- Add all ingredients to a bowl and mix well
- Roll out 10 small balls and place on a baking tray lined with baking paper
- Cook in the oven for around 10 minutes until they just start to go golden, turning once to ensure golden colour all over.
Recipe Notes
These treats are gluten free and vegan. You could use any other sweetner in this recipe but to keep the pale colour it has to be a pale one so agave syrup or honey is ideal. For adults you could also add goji berries or chia seeds to the mixture to make them extra super.
