Instructions
  1. Preheat oven to 150°C.
  2. Add lentils to a large saucepan with the stock, carrots, parsnip, celery and garlic.
  3. Bring to the boil, then reduce heat and simmer uncovered for 10- 15 minutes until the lentils are soft.
  4. Add tomatoes and tomato paste, dried herbs, and nutritional yeast to the lentils. Season to taste with salt and pepper.
  5. Stir in the parsley.
  6. Arrange the lentil mix, onions and potatoes or sweet potatoes in layers, finishing with a layer of potato.
  7. Brush potatoes with some coconut oil, sprinkle with paprika and bake in oven for about 90 minutes or until the top is browned and the potatoes are tender.
Recipe Notes

Clever Tips:

  • Substitute 1 tsp. hot curry powder for the paprika and the nutritional yeast.
  • You can speed up the cooking time by par-boiling the potatoes before slicing for 10 minutes, and gently frying the onions for 5 minutes in coconut oil. Cooking time is reduced by 30 minutes.
