Iced Matcha Green Tea Latte
Ingredients
For Whipped Cashew Cream
- 1 cup raw cashews soaked for at least 2 hours and rinsed.
- 1/2 cup coconut water or plain water N.B. coconut water adds sweetness
- 1 tsp Vanilla essence
- 1-2 tbsp maple syrup or other sweetener
For Iced Matcha Green Tea Latte
- 2 green tea teabags
- 2 tsps matcha green tea
- 1 cup warm plain water
- 1 cup coconut water or plain water
- 1 cup whipped cashew cream see recipe above
- 1 tsp Vanilla essence
- 2-3 tbsp maple syrup or coconut sugar
- few ice cubes
- few mint leaves optional

For the Whipped Cashew Cream
- Soak the cashew nuts for between 2- 8 hours. Drain and rinse.
- Add the nuts and all the other ingredients to a high speed blender and blend until really smooth.
- Refrigerate for up to an hour or more to thicken further.
- The whipped cream can be kept for up to 5 days in the fridge so make a large batch!
For the Matcha Green Tea Latte
- Place the teabags in a cup and half a cup of the warm water to them and allow t steep for 15 minutes. Discard the teabags.
- Spoon the matcha tea into the other half cup of warm water and give it a stir to dissolve it.
- Place all ingredients except the ice, in a high speed blender and blend until well combined. Adjust sweetness to taste.
- Pour the matcha green tea latte over ice in a tall glass and enjoy!
Recipe Notes
Clever Tips;
You can substitute the whipped cashew cream with;
1/2 cup soaked cashew nuts or 1/4 cup mashed avocado.
