Matcha Green Tea Tart
Ingredients
For the Base
- 1/2 cup cashews
For the Topping
- 1/2 cup soaked cashews
- 2 T lemon juice
- 1/2 t ginger powder
- 1 T coconut oil (melted)
- 2 T maple syrup
- 1/2 t Matcha tea
- 2 T water ( add more if needed)

Instructions
- Process all of the base ingredients and press into a small 10 cm tart tin. Place in freezer to set.
- Blend all of the top ingredients, adding all the liquids into the blender first to help it blend nicely.
- Add the topping to the cake tin.
- Replace in the freezer to set.
- Remove from freezer an hour before serving. Add fresh raspberries to the top.
Recipe Notes
Clever Tip
If you make a larger tart to serve 8 or more, line the tart tray with baking paper to make it easy to remove.
