Instructions
  1. Soak cashew nuts for at least two hours before serving. Drain and allow to dry.
  2. To make squash purée, put whole squash in the oven at 170°C for an hour. After an hour, remove from the oven, scoop out the seeds, and blend the remaining fleh in a blender until a smooth purée is achieved.
  3. Add all ingredients except the cashew nuts to a blender and blend until smooth.
  4. Finally add cashew nuts to thicken the mixture and blend again until smooth.
  5. Top with a sprinkle of cinnamon or nutmeg.
