Instructions
- Heat the oil in a medium pot. Add the onions, garlic, and ginger, and sauté for 5 minutes, until soft.
- Add a pinch of salt, the cumin, and the cayenne, and stir for another minute or so, until fragrant.
- Add the tomatoes and the lentils. Then add the vegetable stock and stir well.
- Cover the pot and bring the mixture to a boil. Reduce the heat and simmer for about 20 minutes, until the lentils are soft. Add a squirt of maple syrup to balance the flavour, if desired.
- Serve hot, garnished with the coriander, spring onions, or parsley.
Recipe Notes
RED LENTILS have a velvety texture and a delicate flavour—perfect for purees and soups because they tend to fall apart when cooked. They are low in calories, virtually fat-free, but very filling because of their high fibre content. In addition to providing the body with slow-burning complex carbohydrates, lentils can increase your energy by replenishing your iron stores. This is a particularly good feature for women, who are more at risk of iron deficiency—especially because, unlike red meat, another source of iron, lentils are not rich in fat and calories.
