Breakfast Granola Bars

Protein packed breakfast granola bars that are the perfect sweet and savoury treat. Perfect for post work out, 4pm pick me up, breakfast or kids lunch boxes, wrap them up and take them on the go with you.

Ingredients
- 2 cups oats (gluten free if possible)
- 1/2 cup ground flax
- 1 cup raw mixed seeds (pumpkin/seseame/sunflower/chia)
- 1/2 cup shredded coconut
- 1/2 cup chopped nuts
- 1 tsp cinnamon
- 1/4 tsp salt (use Himalayan if possible)
- 3/4 cup raw honey or raw agave
- 1/2 cup coconut oil
- 1/3 cup almond butter
- 1 tsp Vanilla essence

Instructions
- Preheat the oven to 175 degrees and line a baking tin with parchment paper.
- Add all the dry ingredients to a bowl and mix well (if using whole oats and nuts then they can be broken down in the blender first)
- Melt the coconut oil in a bowl over a bowl of hot water and add all the wet ingredients to the coconut oil and mix well.
- Pour the wet ingredients onto the dry ingredients and stir well making sure everything is coated. Transfer to the baking sheet and press the mixture down firmly using a spoon or spatula
- Bake for 25 minutes
- Carefully use the parchment paper to lift the granola to a wire rack to cool for at least 30 minutes
- Once cooled cut into portions and refrigerate in a sealed container – makes about 12 bars so will keep you going all week!
