Easy Vegan Overnight Oats- Vanilla, Goji, Coconut

If you always find yourself struggling to make your own breakfast as well as the kids and get them to school on time, then overnight oats are the answer. This recipe for easy vegan overnight oats is for the adults, but there are hundreds of variations out there on overnight oats so you can make some for the kids too. The idea is to soak the oats in the fridge overnight in liquid, and they are ready to eat in the morning, cold straight from the fridge or heated up.

Ingredients
- 1/2 cup oats (gluten free if possible)
- 1 Tbsp almond butter
- 1 tsp chia seeds
- 1 tsp milled flax seeds (or use whole flax seeds)
- 1 tsp vanilla bean powder or essence
- 1 Tbsp shredded coconut
- 1 Tbsp goji berries
- 1 cup coconut milk (or use almond milk)
- 1 chopped medjool date

Instructions
- Put all the ingredients in a bowl and stir well.
- Put the mixture in a jar and leave in the fridge overnight.
- Eat cold or warm next morning. If you want to add fresh fruit then add it just before eating.
Recipe Notes
You can add cacao nibs or fresh fruit to the mixture to give it an extra shot of goodness.
