Watermelon Ice Lollies

These frozen watermelon ice lollies are the perfect way to enjoy a a taste of summer without needing to worry about sticky fingers. Best of all, they’re fat free and are 100% natural.
You can choose the unprocessed version;
Just push a lolly stick through the rind and into the flesh of the water melon, freeze on a baking sheet, and serve when frozen!

Ingredients
- 4 cups cubed watermelon flesh
- 1 tbsp lime juice freshly squeezed is best
- 1 tbsp honey optional

Instructions
- Check your watermelon first to see how sweet it is and opt out of adding the honey if you don't need it. The addition of the lime juice adds a tart note but also brings out the sweetness.
- Add watermelon cubes, lime juice and optional honey to a blender, and whizz together.
- Sieve the pulp into a bowl, pressing out as much juice as you can with the back of a spoon.
- Pour into ice lolly moulds and freeze for around an hour. Add lolly stick at this point if partially frozen, or wait a bit longer.

Plan ahead by juicing whatever fruit you have around and making wonderful, natural, refreshing ice lollies- you'll have a healthy clever dessert to look forward to all summer long.
