Pickled radish in oatmeal? I am definitely addicted- but the sweet crunchy flavour is not overpowering at all and perfect for your gut. No need for yogurt for some probiotics. Loving my full oat grains too- nutty and with bite- they just take a bit of extra cooking- soaking overnight speeds it up some.

Amazing colours from the fancy greengrocer in Valbonne! Paid 20€ for fresh rhubarb- totally ridiculous but was stuck in a rhubarb and custard trifle for Xmas Day and the frozen rhubarb just turned to mush when cooked.

Easy peasy Thai inspired salad for dinner- the pea

Easy peasy Thai inspired salad for dinner- the peanut sauce makes this dish very yummy. It’s not got any really hot spices in it so if you want to give your salad a true Thai kick then sprinkle chili flakes on the top or add a few drops of sriracha sauce.

serves 2 generously

For the sauce;
1 tbsp soy sauce
1 tbsp olive oil
2 tbsp grilled sesame oil
2 tbsp sweet chili sauce
100g peanut butter (smooth or crunchy)
Juice of 1 lime

Whisk all sauce ingredients together- the sauce is thick.

For the Salad;
125g egg noodles cooked and cooled to warm temperature (use rice noodles for a fully vegan recipe)
100g bean sprouts
100g mange tout or similar- chopped to bite sized pieces
1 pepper- I used yellow- thinly sliced
1 spring onion thinly sliced

To garnish:
A sprinkle of sesame or flax seeds
A handful of chopped herbs- I used mint and parsley but coriander would be great too.

To make;
Mix all salad ingredients together
Add peanut sauce and mix in well
Garnish with sesame or flax seeds and herbs.

NB I used some pesto flavoured tofu cut into bite sized pieces for some added protein in this salad.

A sprinkle of chopped peanuts on the top would also be deliciously Thai..

Total time to make is around 15 minutes. Hallelujah!

Last day of November 2020. Time to start a little Christmas spirit then. What better way than with your table setting which you can enjoy every day?
No pressure to get something done on time, or go buy this or that, a poinsettia does it simply, but adding a few ‘snowflakes’ and red table mats are also quick and relatively cheap ideas to bring Christmas cheer to your door.
Next will be my Christmas wreath..
